What is in a Greek Salad?

I love a good Greek salad. A bunch of fresh veggies- typically lettuce, tomato cucumbers and red onion, tossed with flavor packed pepperoncini and kalamata olives, then topped with feta cheese crumbles.

All bound together with a bright and flavorful olive oil and red wine vinegar Greek dressing with punches of garlic and herby oregano. Its fresh and zesty and absolutely delicious.

I like to top mine with grilled chicken (marinade in a little Greek dressing before tossing on grill) for added protein.

Sometimes I also add a scoop of hummus and piece pita bread (I like this brand or these mini guys to compete the meal.

But sometimes, I just have a craving for a good sandwich or wrap for lunch, and that’s when I borrow the Greek-inspired flavors for this Greek Turkey Wrap with Hummus.

How do you make Greek Turkey Wraps with Hummus?

Start by chopping your your vegetables. Its important to cut everything nice and small so that you can toss it together and fit it into wrap.

Start by chopping your romaine lettuce leaf into thin “shreds”. Or save a step and buy the pre-packaged shredded lettuce from your grocery store.

Chop cherry tomatoes into quarters. Thinly slice cucumber, then cut slices into quarters (so you have thin, small triangular shapes).

Pro Tip: I like to use English Cucumbers in this recipe as they dont have seeds, are sweeter than regular cucumbers, and they have a softer skin so they are easy to cut.

Slice red onion into thin strips.

Scoop out 3-4 olives and slice them.

Scoop out 3-4 banana pepper rings and chop them into smaller pieces.

Toss all veggies, olives and peppers into a small bowl and add 2T of crumbled feta cheese. Drizzle with 1.5T Greek vinaigrette and toss everything to combine. Set aside.

Grab a tortilla and lay it flat. Spread 2T of hummus evenly on the tortilla.

Layer 2 oz of deli turkey on top of hummus. Tip: keep the turkey in the center of the tortilla so its easier to roll up.

Scoop the lettuce mixture evenly over top of the turkey (again, keep in in the center of tortilla).

Roll tortilla up tightly and cut in half with a sharp knife.

FAQ’s

Can you make Greek Wraps ahead of time to pack for lunch at office?

The moisture from your dressing will make the wrap soggy if it sits too long, so I recommend making the wrap right before you eat it. To pack it for lunch, pack all of the chopped veggies and feta a plastic baggie, pack the hummus in a small container, the dressing in a separate container and the tortilla. Then just assemble at your office quick when you are ready for lunch.

Are Greek Turkey Wraps with Hummus healthy?

This wrap is loaded with vegetables that pack a lot of vitamins. You also get a double shot of protein from the hummus and the turkey. I like to use a whole wheat wrap which also adds some nice fiber.

How many calories are in a turkey wrap?

There are 333 calories in this Greek Turkey Wrap.
