Cheeseburger Quesadillas with Dipping Sauce

Ingredients

For the quesadillas:
- Ground beef
- Seasoning salt
- Black pepper
- Ketchup
- Mustard
- Pickles
- Onions
- Flour tortillas
- Shredded Cheddar cheese
For the homemade burger sauce:
- Ketchup
- Mayo
- Vinegar
- Pickle juice
- Chopped onions
- Chopped pickles
How to Make Cheeseburger Quesadillas
Heat a large skillet over medium-high heat. Add 1 pound ground beef and cook until browned. Drain excess grease and season with 1/2t seasoning salt and 1/2t of black pepper. Stir in 1/2 c ketchup and 1/4 c yellow mustard.



Spray a fry pan with cooking spray. Turn burner to medium high heat heat, and lay a tortilla in pan. Top with a scoop of the ground beef mixture followed by an even layer of shredded cheese, chopped pickles and chopped onions. Lay another tortilla on top. Cook each side of quesadilla approx 2-3 minuets or until golden brown, flipping frequently to avoid burning. Note: This recipe makes 4 full quesadillas. I make them one at a time in a fry pan, but you can use a large electric skillet to make all 4 at one time.


Transfer to a plate or cutting board and let sit for a 1-2 minutes before cutting. Use a pizza cutter to slice into 4 equal pieces.
To make the burger dipping sauce, combine 1/2 c mayo and 2 T of ketchup, 1 teaspoon vinegar, 1 teaspoon pickle juice, 2 T chopped dill pickles, and 1 T chopped onion. Stir until well combined.

Serve quesadillas warm along side dipping sauce in a small bowl.

Leftover Storage, Freezing & Reheating
Fridge:
Store quesadillas in refrigerator for up to 4 days, in an airtight container to keep fresh. Store dipping sauce in a sperate container.
Freezer:
Let quesadillas cool completely, wrap individually in parchment paper or foil and then place in large ziploc bag and seal. Freeze for up to 3 months.
Reheat instructions:
- Skillet: This is best for the crispiest result. Reheat over medium heat for 2–3 minutes per side.
- Air fryer: Air fry at 350°F for 3–5 minutes.
- Microwave: Works in a pinch, but the tortillas will be softer instead of crispy. Microwave 20-30 seconds or until warmed all of the way through.

Cheddar cheese gives the most classic cheeseburger flavor, but American cheese slices melt beautifully too.
