Low Carb Ground Turkey Skillet with Cauliflower Rice
Packed with Southwest flavors, this Low Carb Ground Turkey Skillet served over cauliflower rice, is an easy and healthy one pan dinner.
What are skillet meals?
Need an easy dinner in under 30 mins that feeds the whole family? A one-pan skillet meal is definitely the way to go!
Skillet meals are great because everything is cooked in your one skillet which cuts down on complexity, and on clean up. Typically a skillet meal consists of a protein, vegetates, seasonings, and sometime even a sauce are all simmered together in a hot skillet, cooking everything at once.
Scoop directly from the skillet into plates, and you have yourselves a simple and well rounded meal.
I like to use this pan or this pan for my skillet meals.
What ingredients do you need for Ground Turkey Skillet with Cauliflower Rice?
- ground turkey
- olive oil (I prefer this brand)
- frozen spinach
- red bell pepper
- shallot
- cumin
- paprika
- coriander
- onion powder
- garlic powder
- cayenne
- dried parsley
- salt and pepper
- cauliflower rice (I like this one or this one)
- siracha mayo (optional)
- pico de gallo (optional)
- shredded lettuce (optional)
How to make the skillet dinner
Over medium-high heat, coat the bottom of your skillet with olive oil (approx 2T) and add 1lb of ground turkey. Break the turkey up using the back of a wooden spoon or a meat masher tool (like this one).
While the meat is browning, combine all spices in a small cup. Add 1/2t cumin, 1/2t paprika, 1/2t coriander, 1/2t onion powder, 1/2t garlic powder, 1t salt 1/4t pepper, 1/4t cayenne, and 1T dried parsley.
Pour the seasoning mixture over the ground turkey and cook until no longer pink, while stirring occasionally.
Finely dice 1 red bell pepper and and 1 shallot. Note: I prefer to use my food processor to get ensure I get a nice, small dice, and to save a little time. Add diced vegetable’s to the skillet and stir to combine.
Add in 1 cup of frozen spinach (defrost in the microwave for a few seconds if you need to to break up a bit to measure it out). Spinach will thaw the rest of the way in the hot skillet.
Continue cooking over medium heat for another 2-3 minutes, stirring frequently until everything is well combine and warmed though.
Cook your cauliflower rice per the package instructions. I do mine in the microwave.
Scoop rice into bowls and top with a heaping cup of the ground turkey mixture. I like to drizzle a little siracha mayo, shredded lettuce and some store bought pico de gallo.
FAQ’s
Can you use regular rice instead of cauliflower rice?
Yes! This dish can also be served over Jasmin rice or brown rice. Using cauliflower rice, however keeps the carbohydrate count at 15 grams per serving. Using another kind or rice will increase the carbs.
Is this a good meal prep?
Stored in an air tight container in the fridge, Low Carb Ground Turkey Skillet with Cauliflower Rice will last up to 4 days. Scoop rice and meat mixture into individual containers, and take them to work for lunches for the week. Add the shredded lettuce, pico, and siracha mayo right before eating.
What other kinds of proteins work in this skillet meal?
You can easily substitute ground chicken or pork for the ground turkey. If you substitute ground beef, make sure to drain access grease prior to adding the spices.
