Frankenstein Cake Pops are a Halloween party show stopper! Take a shortcut by using Swiss Cake Rolls, and these cute monster treats will come together in just minutes.

What Are Frankenstein Cake Pops?

Ok, Halloween cake pops are delicious. And they are always so cute and convenient to eat on a dainty little stick that keeps your fingers nice and clean.

But they are actually really time consuming and pretty tedious to make.

First, you bake the cake, then you essentially deconstruct the cake just to hand roll it into zillions of little balls. Then you freeze the balls, followed by dipping each ball in a coating, waiting for it to dry, THEN you still have to decorate them.

I just don’t have the time for all of that!

But, that doesn’t mean my Halloween parties are cake pop-free! I take a huge shortcut by using premade Swiss Cake Rolls. This way, all that I have to do is add the stick and decorate (which is really the fun part anyways).

These little guys are always a crowd pleaser!

What ingredients do you need for shortcut cake pops?

  • swiss cake rolls (I prefer these)
  • green decorating cookie icing (like this one that comes with the decorating tip)
  • white decorating cookie icing (like this)
  • candy eyes
  • popsicle sticks (I like the jumbo sticks as they are easier for kids to hold)

How do you make (shortcut) Frankenstein Cake Pops?

Start by unwrapping the Swiss cake rolls. Discard packaging.

Slowly inert a popsicle stick into the end each roll. I like to hold my finger on the opposite end so I can feel when the stick is getting close to poking all of the way though. Stop just short of it reaching the other end.

Use the white icing as “glue” to stick two candy eyes into each the rolls. I recommend putting the icing on the eyes directly rather than onto the roll. You will have more control this way and it will look cleaner.

Tip: Place the eyes towards the center of the roll. This will leave enough room to make Frankenstein’s hair.

How do you decorate cake pops?

Grab the green icing tube and snip the tip. Be sure to snip it so that the opening is small enough to create thin lines. The further down that you snip, the wider the opening will be, and the thicker (and harder to control) the frosting lines will be.

Let your creativity run wile with decorating! I like to make Frankenstein’s hair above the eyes and a mouth below the eyes. Mix it up and do some of the hair in a zig-zag and some using by using strait lines.

For the mouths, I make some to look like stiches and some to be strait or angles lines. Varying the design will make the cake pops more interesting.

Finish by adding a small dot on either side of his eyes as the “bolts” in his neck.

Tip: Be creative! Try adding teeth or even extra stich marks on his forehead or chin.

Lay the cake pops flat for a few minutes for the icing to dry.

Serve on a platter or cake plate. You can even use extra candy eyes to sprinkle around the plate to make it feel even more creepy if you’d like.

How long will the cake pops last?

Store leftovers in an airtight container for up to a week. No need to refrigerate.

FAQ’s

Can you use Hostess Ho-Hos instead of Little Debbie Swiss Cake Rolls?

Ho-Hos are bigger than the Swiss Cake Rolls, so the pops will be larger and feel less like a cake pop. I much prefer the scale of the SCR for this dessert. If you do use a Ho-Ho, definitely make sure that you use the jumbo size popsicle stick to hold the weight. Or forgo the stick altogether.

How do you make the cake pops stay together?

Good news…you don’t have to! By using the pre-made Swiss Cake Rolls instead of crumbly balls, they will stay together perfectly. Just make sure when you are inserting the popsicle stick, that you get it all of the way though the roll until it almost comes out the other end so that they are not too top heavy.

Can you freeze Frankenstein Cake Pops?

No, I wouldn’t recommend freezing them. But if stored properly, they will last up to a week so you can make them a day or two in advance if you are running short on time.

  • 2 boxes Swiss Cake Rolls they come with 12 rolls per box
  • 1 tube icing – green w/ cookie decorating tip
  • 1 tube icing – white w/ cookie decorating tip
  • 48 candy eyes
  • 24 popsicle sticks jumbo
