Greek Turkey Wraps with Hummus

Bursting with the zippy flavors of Greek salad, but wrapped up into a handheld sandwich, this Greek Turkey Wrap with Hummus is one of my favorite things to make for lunch.

Ingredients
  

  • 1 tortilla (I like these)
  • 2 T hummus
  • 2 oz deli turkey
  • 1 leaf lettuce romaine works well
  • 3-4 slices cucumber
  • 3-4 cherry tomatoes
  • 5-6 strips red onion
  • 3-4 kalamata olives (like these)
  • 3-4 banana pepper rings ( I like these mild ones)
  • 2 T feta cheese crumbles
  • 1.5 T Greek vinaigrette (I use this one)

Instructions
 

  • Start by chopping your romaine lettuce leaf into thin "shreds". Or save a step and buy the pre-packaged shredded lettuce from your grocery store.
  • Chop cherry tomatoes into quarters. Thinly slice cucumber, then cut slices into quarters (so you have thin, small triangular shapes). Note: cut all veggies nice and small so they will fit into your wrap
  • Slice red onion into thin strips.
  • Scoop out 3-4 olives and slice them.
  • Scoop out 3-4 banana pepper rings and chop them into smaller pieces.
  • Toss all veggies, olives and peppers into a small bowl and add 2T of crumbled feta cheese. Drizzle with 1.5T Greek vinaigrette and toss everything to combine. Set aside.
  • Grab a tortilla and lay it flat. Spread 2T of hummus evenly on the tortilla.
  • Layer 2 oz of deli turkey on top of hummus. Tip: keep the turkey in the center of the tortilla so its easier to roll up.
  • Scoop the lettuce mixture evenly over top of the turkey (again, keep in in the center of tortilla).
  • Roll tortilla up and cut in half.
