If you need a quick no-bake dessert that feels extra fun and festive for St Patrick's Day, these Lucky Charms Cereal Bars are about to make your day. They’re gooey, chewy, buttery, and packed with those colorful little marshmallows that make everyone smile before they even take a bite.
Grease a glass or metal baking dish with cooking spray. This will make it much easier to lift the bars out later. For thinner bars, use a 9x13 baking dish. If you prefer thicker bars, use a 9 x9 pan .
In a large pot over low heat, melt 5 tablespoons butter.
Once the butter is melted, stir in 5 cups of mini marshmallows. Stir gently until the marshmallows are melted and smooth. Tip: Don’t rush this part with high heat. If the marshmallow gets to hot, your bars will be hard.
Remove the pot from the heat and quickly stir in about 4 cups Lucky Charms cereal. Fold gently until the cereal is evenly coated in the marshmallow mixture. Note: I like these bars extra gooey. If you prefer more cereal than marshmallow, use 5 cups of Lucky Charms.
Spoon the mixture into your prepared pan. To prevent sticking, spray the back of a spatula or wax paper with cooking spray and press the mixture it into an even layer. Try not to smash it down too hard or the bars can get dense.
If you want to add some extra color to the tops of the bars, press some extra Lucky Charm's marshmallow shapes into the top of the before they cool.
Leave the bars at room temperature until firm enough to cut.
Cut into squares or rectangles and serve. For bake sales or parties, I like to keep the bars bigger. When serving to kids, I cut them into smaller squares.
