BLT Chicken Salad

Kick your lunch up a notch with creamy BLT Chicken Salad. Served over crunchy, shredded lettuce, it's a perfect blend of chicken, salty bacon and sweet tomatoes.

Equipment

Ingredients
  

  • 3/4 cup plain greek yogurt (I like this one)
  • 1/3 cup sour cream regular or lite
  • 2 T mayonnaise (I like this one)
  • 2 T ranch seasoning
  • 3 cups chicken cooked and shredded
  • 1/2 cup grape tomatoes chopped
  • 1/2 cup bacon (approx 4 strips) cooked and chopped
  • 3 cups shredded lettuce

Instructions
 

  • In a large bowl, stir together 1/3 c plain greek yogurt, 1/3 c sour cream, 2T mayo and 2T of ranch seasoning.
  • Stir in 3 cups of shredded chicken.
  • Add 1/2 cup of chopped tomatoes and 1/2 cup of chopped bacon. Stir to make sure everything is combined and well coated in the mayo mixture.
  • On a plate, layer 1 cup of shredded lettuce, and top with a scoop of the chicken salad.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days.
