Easy Tortellini Soup

Delicious, cozy, homemade Tortellini Soup with all of the classic flavors of my Italian family's handmade version, but simplified to only 6 ingredients so you can make it on a busy weeknight.

Ingredients
  

  • 32 oz chicken stock (I like this one)
  • 2 c beef broth
  • 3 T tomato paste heaping
  • 3 t salt
  • .5 t pepper
  • 20 oz refrigerated tortellini chicken and cheese filled for richest taste like this one or this one

Instructions
 

  • In a large pot over medium heat, combine 32oz of chicken stock and 2c of beef broth.
  • Stir in 3 (heaping) tablespoons of of tomato paste, 3t salt and 1/2t pepper and bring to a boil.
  • Once boiling, add in the 20oz package refrigerated tortellini. Check the package for cook times. Most only require 4-7 min.
  • Ladle into bowls and serve with shredded mozzarella or parmesan cheese to add on top.

Notes

This is a very kid friendly dish with just a simple both and pasta.
Want to pack an extra nutritional punch with this soup? Add in vegetables like sliced carrots, diced tomatoes, spinach or kale. You will need to either use more broth or less pasta to accommodate the extra veggies.
Store refrigerated in an air tight container for up to 4 days, The past may start to soak up the broth over a few days, so I recommend having some extra chicken broth that you can add back in if needed.
