Liz Olberding @ Up North Nosh

Equipment

  • melon baller tool
  • microwave safe bowl
  • parchment paper

Ingredients

  • 3 Granny Smith Apples
  • 16 oz Almond Bark milk, white or dark chocolate work
  • 1 T sprinkles
  • 1 T pistachios crushed
  • 1 T dried cherries chopped

Instructions

  • In a microwave safe bowl, melt 16oz of the chocolate. (I prefer to dip some in milk chocolate, and some in white chocolate, so I melt 8 oz of each flavor). Set aside.
  • Get your toppings ready. I like to use sprinkles, chopped dried cherries and crushed pistachios. Organize your toppings into small bowls and set aside.
  • Lay a piece of parchment paper on flat surface for the bites to harden.
  • Using a teaspoon size melon baller like this one, carve ball shapes out of the apples. There is no need to peel the apple. The apple skin will add a little texture and give the chocolate something to grab on to. I can get 8-10 balls out of a medium sized apple, so 3 apples will get you approx two dozen apple bites.
  • Use a fork to dip the apple balls in the melted chocolate making sure its completely coated. Tap off and access chocolate, and place ball on parchment paper.
  • Immediately sprinkle each ball with toppings and let harden. Work quickly to prevent the apples from turning brown. You could also carve one apple, dip and sprinkle those balls before starting on the second apple.

  • Once the chocolate has hardened, use a pairing knife to trim away any access chocolate from the bites.
  • Serve on a cute plate or tray.
  • Refrigerate leftovers in an air tight container for up to 3 days.
