In a stand mixer (or large bowl and hand mixer), cream together softened butter, sugar and brown sugar.
Add in egg, one egg yolk and vanilla. Mix in baking powder and salt. Add flour a bit at a time mixing in between.
Stir in white chocolate chips and dried cherries. Give everything another good mix. Chill dough 1 hour
Line baking sheet with parchment paper or a silicone mat. Using a spoon or cookie scoop like this one, scoop small balls of the batter (approx 1 T) onto paper lined cookie sheet.
Bake at 350 degrees for 8-10 mins.
Let cookies cool on a cooling rack.
